I have just added FCKEditor to my MediaWiki installation and it all works fine. I have even set this editor as the default and that works fine too, but if I am to disable the FCKEditor after editing something, the original MediaWiki toolbar is shown twice:
Why is it doing this?

Because a horse can't fly? How can we help you if you don't give us any information? Some script codes, more information about the cause of the problem?
But I read a few days ago you're searching for a developer, so why don't you wait and give the problem to the developer?

Right then:
- i am using the latest version of mediawiki
- i am hosting it locally using wamp
- i have a few extensions installed but none of them interfere with the editor
- the issue occurs only when the FCKEditor is set to default and when I disable it in the editor view

You have to search for the function that disables the editor. Maybe Mediawiki uses a toolbar that's called i.e. "mediawiki". If you disable the editor, the script checks if this toolbar should be shown or not.
You write that you've added FCKeditor yourself. Maybe with another name for the toolbar? This toolbar is always being showed. When you disable the editor, the toolbar "mediawiki" is shown too. Which make two toolbars on your screen.
I don't anything about MediaWiki, but maybe my thoughts can you help you any further. If not, sorry
