I found this on the wiki:
Customizing the FontFormats list
(this is a bit off topic, but there was no other page to put it in..) This should be easy, only it isn't. If you wish to change list of font formats, you will need to edit the following files:
/fckconfig.js
*
Where it says "FCKConfig.FontFormats = ..."
/editor/_source/classes/fcktoolbarfontformatcombo.js
*
_gecko_2.js
Search for the place where it says "var oNames=". There is another list you need to edit.
/editor/lang/... (You'll need to update all relevant languages. I use only one language myself, so it's pretty simple)

Where it says "FontFormats ..."
There you go!
(Note: The above is not quite true. If all you wish to do is remove a format from the list, or reorder the list, you can do that in the config file. If all you want to do is change the display name of a format style, you can do that in the appropriate lang/ file. But if you wish to add new styles, it's of course more complicated.)

I try to remove some entris from the default list. Here is what I did:
Edited the FCKConfig.js
FCKConfig.FontFormats = 'p;h1;h2;h3;h4;h5;h6' ;
Edited the fcktoolbarfontformatcombo.js
var oNames = {
p : aNames[0],
h1 : aNames[1],
h2 : aNames[2],
h3 : aNames[3],
h4 : aNames[4],
h5 : aNames[5],
h6 : aNames[6]
} ;
Edited my Language file:
FontFormats : "Normal;Tittel 1;Tittel 2;Tittel 3;Tittel 4;Tittel 5;Tittel 6",
The FontFormats liste is correct in FF 1.5. but in IE6 I get listed:
Normal, Tittel 3, Tittel 4, Tittel 5, Tittel 6; Undefined, Undefined
Related to size Tittel 3 is Tittel 1 (<h1> in html-source)
Can this be a Bug? Can anyone please help with this? I have search for an answer, but no luck.

The gecko file is used for firefox.
For IE you have to edit an other file, the file _ie_2.js - same changes as you did for gecko.
It should work then.
