CKEditor 3x config options

I looked into the support forum but didn't see a specific CKEditor 3x forum. I just wanted to ask quickly about defining config options. I know in FCKEditor you could define config options like EnterMode and ShiftEnterMode, setting each to br/div/p tags. I'd like to do the same for the CKEditor 3x but can't seem to get it to work. I'm basically attempting to remove the <p></p> tags that enclose the typed text. I'd settled for <div></div> if I have to supply something for compliance sake. Thanks.
