Changing UserFilesPath in PHP

OK, in ASP this was easy and just required a cookie. For PHP I'm having some trouble. Could anyone suggest an EASY way to change this variable for both php uploads and the browser? I need to use different folders for different areas of the site and I am so far not finding a good way to do this.
