is it possible for me to customise the toolbar by removing bits of it.
effectively, i want to 'dumb' the interface down and end up with a single row toolbar just containing font and text related buttons.

look for
/editor/fckconfig.js and remove the options under the "Default Tool Bar" IE: "'Source',"
OR
IN your:$oFCKeditor->BasePath = 'editor/fckeditor.html?InstanceName=MyEditor&Skin=Office2003&Toolbar=Default';
change to to:
$oFCKeditor->BasePath = 'editor/fckeditor.html?InstanceName=MyEditor&Skin=Office2003&Toolbar=Basic';

It looks as though you haven't included the FCKeditor javascript. Add the line:
<script language="JavaScript" type="text/javascript" src="[your context path]/fckeditor.js"></script>
in your head.
