I've been searching around for a couple of days now and i'd like to know :
- Where is the default table width defined ?
- How and where can i customize it without changing the core code ?

Table width is defined in
Table width is defined in code - there's no configuration option for it, because this value is conditional (depends on width of editor).
However, you can change it using the CKEditor dialog API. Check the sample: http://nightly.ckeditor.com/standard/samples/plugins/dialog/dialog.html
