I don't know if the table feature set is closed now, for the 3.0, but here are some idea about it :
I always found that table in html editor (javascript or big ones like dreamweaver) are very different that table in DTP software. It was ok when web page was ugly (remember your first web page in the 90'), but now, we have beautifull web pages, with beautifull page layout, I think it would be nice to have a table editor less "html 3" style, and more "web 2.0" style. So, what are the main function that we can found in a DTP software, and not in a HTML table editor ? I think those are the main two :
- possibility of alternate coloring for row or colls background
- possibility of colls styling
This if two little things, very easy to achieve in a DTP soft, (even in Excel), and very difficult (well, not exactly difficult, but long and anoying) to do in HTML editor, 'cause of the HTML TR-TD structure.
Another thing which will be very usefull, is the "import" function, from a text file, tab-tab-return formated. Because when you have a source of data somewhere, in a text editor, or MS Excel, it's very annoying to copy it, cell by cell, in your web page. For exemple you have a magazine, prepared for print in inDesign or XPress, and you want a online version. If you don't have the money for the expansive soft which do that automaticly, you will use copy-paste, from inDesign to FCKEditor. But for table, how annoying !!
An import function, or a convert function (you paste a tab-tab-return text, and it's converted into table) would be very nice.
I've developped a plugin which do some of those points. I'ts a quick and dirty developpement, and it's only in french, but I think you can play with it, and understand how it works, and see if my idea are usefull or not.
Anyway, congrats for FCKeditor, it's a great soft !!

Aynway:
The ability to create a table from text is nice, but I would separate it in a tab, the whole dialog is too high, I couldn't see the bottom.
It doesn't seems possible to edit an existing table
I would rather like to be able to edit the classes of <tr> and <col> elements, so it isn't limited to just the colors but anything would be possible (usually people want to change the alignment of data columns to the right)
linked to the previous comment, the system is designed to work only with either rows or cols, it would be nice to be able to set any of those values (I mean alternating rows and alternating cols at the same time)
Also, sometimes you want to mark out a row or col different, but not to repeat, just one col with a special style.
I'm not sure (I've tested it quickly) but it seems that it always inserts the new table with id="yoyo"
There are other options that I'm not sure about what they do.

I agree with all your propositions, even if some could be hard to implement in a simple dialog.
